After successfully convincing the city to give up their Sunday morning sleep to learn the Principles of Ayurveda in Cooking with Amrita Kaur, the Breakfast Club at 212 All Good now promises to make your Saturday morning eventful. This time around we have Moina Oberoi of Mo’s Kefir – our favourite human and brainchild who introduced the city to the probiotic wonders of kefir.

A SESSION WITH AUNT MO ON THE ART OF PICKLING THE WAY YOUR GRANDMOM DIDN’T.

What is Pickling? Time to don those nerd-glasses and knock on the door of science. Pickling is the process of preserving food by anaerobic fermentation in brine or vinegar, and can preserve perishable foods for months. Simply put, pickling is one of the oldest methods of preserving food and the process is to have originated in India. Well, no surprises there! India’s commitment to pickling reflects in the humble ‘achaar’ found in almost every Indian household. Some consider it blasphemous to have a meal without it. However, most Indian pickles aren’t fermented and have very little or no probiotic element.

What Will I Learn in the Session? In addition to hanging with Moina and learning some fun facts about pickling and fermenting, you’ll learn 4 ways to pickle vegetables with salt brine, vinegar, whey and miso! Moina will also share some powerful insights on this amazing method of preservation, explaining the difference between regular preserved pickles and fermented (live cultured) pickles. The session will also focus on difference between salt pickling and vinegar pickling, the best salts to use and the best vegetables for pickling, and also how to pickle with dry herbs and whole spices.

But How Is It Healthy?

The benefits of eating pickled and fermented foods are many: consuming these results in an improved gut health, which is considered to be the storehouse of probiotic or gut-friendly bacteria. Improved skin, stronger immune system, positive mood and thinking as well. Apart from that, pickled vegetables and fruits make for an excellent snack. You can easily binge on them while showing guilt the exit route.
