On the 4th of May, Chef Rahul and Chef Harsh will be teaming up with The Good Food Lab to serve a menu where they would be doing stuff like Rawas wings with an XO sauce made with fish hearts, a rassam made with fish bones, dumplings made with trim and tail meat, as well as a caramel custard enriched with rendered fish fat that adds a soft umami to the caramel.
